Chicken Apple Sausage And Spinach Frittata With Smoked Gouda

Chef Larry's Recipe

  • 8-12 each Eggs, large
  • 1/4 cup Milk
  • Salt to season
  • Fresh ground black pepper to season
  • Cooking oil as needed
  • 1 cup Chicken Apple Sausage, cooked, diced
  • 1/4 cup Onion, finely diced
  • 1 cup Mushrooms, sliced
  • 2 cups (packed) Spinach leaves, fresh, stemmed, rough chopped
  • 1 cup Smoked Gouda cheese, shredded
  • Fresh fruit and berries for service
Method Combine eggs and milk season with salt and pepper. Mix well. Heat a non-stick omelette or egg pan over medium heat. Add a small amount of oil. Portion and add onion, Chicken Apple Sausage and mushrooms, saute briefly. Portion spinach, add to pan and wilt. Portion beaten egg into pan and cook until set. Gently flip or turn over. Top with shredded Smoked Gouda cheese and allow to melt. Turn out onto serving plates. Repeat process to create 4 servings. Serve with fresh fruit and berries.

Makes 4 Servings

Chef Larry's Notes Chicken Apple Sausage is available in many gourmet markets and butcher shops. Turkey sausage or traditional breakfast suasage may be substituted. Smoked Gouda cheese, originating in Holland, can be found in the specialty cheese section in most supermarkets.
