Mayonnaise, an emulsified sauce traditionally based on egg yolks, comes in several variations. Reduced fat, cholesterol-free mayonnaise (ranging from 25 to 50 percent less fat than regular mayonnaise) and nonfat mayonnaise are available in most supermarkets. Refrigerated, commercially-prepared mayonnaise will keep for up to 6 months.
