Tip: Mangos

The color of a mango is unimportant -- it may be green, orange, yellow, or red. Texture does matter -- the mango should yield slightly to pressure when squeezed. To ripen, place the mango in a paper bag at room temperature for 1 or 2 days and check daily; black spots indicate over-ripe fruit. Once ripe, a mango will keep for up to 3 days in the refrigerator.
