Tip: Goat Cheese

Goat cheese (chevre in French) is made from goat's milk and may be either white or coated with herbs. Once opened, wrap the cheese in plastic wrap and store in the refrigerator for 1 or 2 weeks. Feta cheese and caprini also are cheeses made from goat's milk; they are less creamy and serve different purposes in cooking.
