Ham, Smoked Gouda Breakfast Quesadilla

Chef Larry's Recipe

Ingredients
  • 8 Flour tortillas, 6"-8"
  • 2 cup Smoked Gouda cheese, shredded
  • Cooking oil as needed
  • 2/3 cup Ham diced
  • 1/4 cup Scallion, minced
  • 1/4 cup Red and green bell peppers, small dice
  • 6-8 Eggs, large
  • Salt to season
  • Fresh ground black pepper to season
  • 4-6 pats of butter
  • Chef Larry's Pico de Gallo for service (recipe follows)
  • Sour cream for service
  • Fresh cilantro sprigs to garnish
Method
Prepare Chef Larry's Pico de Gallo per recipe, reserve. Add small amount of cooking oil to a preheated pan. Add scallions and peppers, saute until tender. Add diced ham and heat through. Add eggs, season with salt and fresh round black pepper. Cook eggs to a scramble, cool.

Lay four of the tortillas on work surface and top with some of the shredded Smoked Gouda cheese. Top with cooled scrambled egg/ham mixture. Top with additional Smoked Gouda cheese. Place remaining tortillas and on top (gently pressing down) to form quesadillas. Heat a skillet or flat grill. Add a pat of butter and cook quesadillas until golden brown on both sides and the cheese has melted.

Remove and cut into quarters and place on warm serving plates returning it to its original shape. Top with Chef Larry's Pico de Gallo and a dollop of sour cream. Garnish with fresh cilantro sprigs and serve.

Makes 4 Quesadillas

Chef Larry's Pico De Gallo
Ingredients
  • 1 1/2 cup Fresh tomatoes, diced
  • 1/2 cup Red onion, finely diced
  • 1/2 tsp. Jalapeno pepper, seeded, finely diced
  • 1 tsp. Fresh garlic, minced
  • 1 T. Cilantro, minced
  • Squeeze of fresh lemon juice
  • Salt to taste
  • Fresh ground black pepper to taste
Method
Combine ingredients in a large bowl. Mix thoroughly. Season with salt and pepper. Adjust seasoning if necessary. Cover tightly and refrigerate until service.

Makes 2 Cups
