Fresh Summer Berries with Riesling Sabayon

- 1 cup Fresh raspberries
- 1 cup Fresh blueberries
- 1 cup Fresh blackberries
- 1 cup Fresh strawberries. stemmed and halved
- 4 each Fresh mint sprigs
- to garnish Chocolate, shaved
- to garnish Fresh mint sprigs
- 3 oz. White Riesling wine
- 4 each Egg yolks
- 1/3 cup Sugar
- 1/2 tsp. Orange zest
- 1/4 cup Orange juice
Makes 4 - 6 servings
Method
Prepare Riesling Sabayon by placing a saucepan with water over low heat. Bring water to just below a simmer. Place Riesling, egg yolks, sugar, zest and orange juice in a stainless steel mixing bowl. Place mixing bowl over pan with water. Whisk vigorously until mixture thickens. Remove and reserve. Portion berries in wine glasses. Pour warm Riesling Sabayon over berries. Garnish with mint sprigs and shaved chocolate.
Chef Larry's Notes
White Riesling is a wine of German origin made of slightly sweet style. Any dessert wine such as Muscat or even Gewurtztraminer may be used in this recipe.
