Shrimp Salad

Chef Larry's Recipe

Ingredients
  • 1 lb.Shrimp, cooked, cut into small dice
  • 1 cup Celery, finely diced
  • 1/4 cupRed and green bell peppers, finely diced
  • 1/4 cupScallions, minced
  • 1/2 cupMayonnaise
  • 1 1/2 tsp.Dijon white wine mustard
  • 1/4 tsp. Curry powder
  • 1/2 tsp.Worcestershire Sauce
  • 2 - 3 dashes Tabasco Sauce
  • Squeeze of Fresh lemon juice
  • Salt to season
  • Fresh ground black pepper to taste

For Service
  • 4 Red or green leaf lettuce leaves
  • 1 Avocado, sliced
  • 8 - 12 Tomato slices
  • 4 Dark bread slices
  • 4 Lemon wedges
Method
Place ingredients in a mixing bowl and mix well, season to taste with salt and pepper and a squeeze of lemon. Place leaf lettuces on chilled serving plates and top with Shrimp Salad. Garnish with avocado, tomato, bread slices and lemon wedges.

Makes 4 Servings
