Ingredients

  • 8-10 ripe avocados, halved and peeled

    For the "Pico de Gallo":

  • 3 Cups tomatoes, diced
  • 1 Cup red onions, finely diced
  • 1 Jalapeno pepper, seeded, finely diced
  • 1 1/2 tsp. minced garlic
  • 1/4 cup chopped cilantro
  • 1/4 cup fresh lemon juice
  • Salt to taste
  • Fresh ground black pepper to taste

    Method
    First prepare the "pico de gallo" by combining ingredients in a large bowl, and mix thoroughly.

    Add avocados, mashing gently until all ingredients are well incorporated. Adjust seasoning if necessary. Cover and refrigerate until served.

    Serve with tortilla chips or as a condiment.

    Makes: 8-10 Servings
