Roasted Asparagus

Ingredients

  • 1 1/4 lb. Fresh asparagus, medium, ends trimmed
  • 2 T. Olive oil
  • 1 T. Fresh lemon juice
  • 1/4 tsp. Salt
  • 2-3 twists of fresh ground black pepper

    For Service:

  • 1/2 cup Spanish Manchego cheese or Reggiano Parmesan cheese
  • 1/4 cup Fresh chives, minced
  • Lemons slices to garnish

    Method
    Place asparagus in a shallow baking dish. Drizzle with olive oil and lemon juice. Season with salt and pepper. Sprinkle lemon zest over asparagus.

    Bake in a preheated oven at 450 - 500 degrees F for 10 minutes, carefully shaking pan 2 - 3 times during roasting.

    Remove and portion onto warm serving plates. Top with shaved or shredded cheese. Garnish with lemon slices and minced chives.
