Method Beat egg, milk, melted butter, vanilla and pumpkin puree until well blended. Mix in dry ingredients, flour, baking powder, sugar, salt and cinnamon to form a slightly thick batter. Lightly grease or butter a preheated griddle or fry pan. Pour batter onto griddle to form pancakes, top each with dried cranberries or raisins and toasted nuts. Cook on griddle until golden brown and cooked through.
Serve with whipped butter and warm syrup.
