Mushroom and Ham Fritatta

8 Eggs, large 1/4 cupMilk Salt to season Fresh ground black pepper to season Olive oil or cooking oil as needed 2/3 cup Mushrooms, sliced 3 Scallions, minced 1/2 cupSmoked ham, cut into small dice 1 1/2 cupCheddar cheese, shredded 1 1/2 tsp. Fresh parsley, chopped Method
Combine eggs and milk, season with salt and pepper. Mix well and reserve. Heat a non-stick omelette or egg pan over medium heat. Add a small amount of oil. Add mushrooms, scallions and ham. Cook for 3 minutes or until mushrooms become tender. Portion egg and parsley and add to pan. Cook eggs until set. If desired flip fritatta over. Top with cheese and serve.
