Apple And Smoked Ham Omelette With Manchego
Ingredients:
Combine eggs and milk. Season with salt and pepper. Mix well and reserve. Heat oil in a omelette pan. Portion diced apple, scallion and ham in to pan, sauté until apples are slightly tender. Portion beaten egg into pan. Stir and cook until set, carefully flip or turn. Top with shredded Manchego cheese. Turn omelette out onto warm serving plate and fold over. Top with additional shredded Manchego cheese. Garnish with fresh fruit or berries for service. Repeat process to create 4 servings.

Manchego is a Spanish sheeps milk cheese. It can be found at specialty food stores such as Pata Negra in Pacific Beach.
- 8 each eggs, large 1/4 cup milk To season fresh ground black pepper To season salt As needed cooking oil 3/4 cup Gala or Golden Delicious apples, peeled, small dice 1/2 cup smoked ham, cut into thin strips 2 each scallion, minced 1 tsp. parsley, minced 1 1/4 cup Spanish Manchego cheese, shredded For service fresh fruit or berries
