Candied Apple French Toast

Ingredients:

  • 4 slices sourdough bread, thick slice, cut in half
  • 3 each eggs
  • 1/4 cup milk
  • 1/4 tsp. ground cinnamon
  • As needed cooking oil or clarified butter
  • 2 oz. butter
  • 2 each Granny Smith or Pippin apples, medium, peeled and diced
  • 1 cup maple syrup
  • 1 cup lightly sweetened whipped cream
  • To garnish Confectioner’s sugar
  • To garnish toasted sliced almonds or crushed toffee bits
  • 4 each mint sprigs
  • To garnish fresh strawberries, stem, cut in half

Method:

Melt butter in a saucepan. Add diced apples and and saute until tender. Add maple syrup and heat through, reserve. Combine eggs, milk and cinnamon, mix well to create egg batter. Heat griddle and add a small amount of cooking oil or butter. Dip bread slices in egg batter and place on griddle. Cook until golden brown on both sides. Place on warm serving plates and top with apple mixture. Garnish with whipped cream, mint and halved strawberries. Top with toasted sliced almonds or toffee bits. Dust with Confectioner’s sugar and serve.
