Ham And Asparagus Omelette

Ingredients:

  • 8 each eggs, large
  • 1/4 cup milk
  • To season fresh ground black pepper
  • To season salt
  • As needed cooking oil
  • 3/4 cup smoked ham, cut into thin strips
  • 1/4 cup scallion, minced
  • 1/4 cup tomato, seeded, small dice
  • 12 each asparagus spears, cooked, sliced
  • 6 oz. Boursin cheese (Garlic Herb Cheese)
  • For service fresh fruit or berries
  • For service (optional) asparagus spears, cooked

Method:

Combine eggs and milk. Season with salt and pepper. Mix well and reserve. Heat oil in a omelette pan. Portion ham, scallion, asparagus and tomato ham in to pan, sauté briefly. Portion beaten egg into pan. Stir and cook until set, carefully flip or turn. Top with Boursin cheese. Turn omelette out onto warm serving plate and fold over. Garnish with fresh fruit or berries and cooked asparagus spears. Repeat process to create 4 servings.

Makes 4 servings

Chef Larry's Notes:

Boursin, a garlic herb cheese, can be found in the cheese section of the market. Alouette or Rondele can be substituted for Boursin in this recipe.
