Green Bean Salad With Whole Grain Mustard Vinaigrette

Yield: 6-8 Servings
Ingredients
  • 1 1/2 lb. Fresh greens, trimmed and cooked
  • 1/2 cup Tomato, seeded and diced
  • 2/3 cup Red onion, thinly sliced
  • 4-5 Fresh basil leaves, minced
Whole Grain Mustard Vinigrette
  • 2 tsp. Whole Grain mustard
  • 2 tsp. Mayonnaise
  • 1 tbsp Balsamic vinegar
  • 2 tsp. Sugar
  • 1/4 cup Olive oil, extra virgin
  • Salt to taste
  • Fresh ground black pepper to taste
Method
Whisk whole grain mustard, mayonnaise, balsamic vinegar and sugar together in a mixing bowl. Add olive oil while whisking until all of the oil is incorporated. Season with salt and fresh ground black pepper. Place green beans, tomato, red onion and basil in a bowl. Add Whole Grain Mustard Vinigrette and toss. Adjust seasoning if necessary.
