Orange Curry Turkey Salad

Chef Larry's Recipe

Ingredients
  • 1 1/4 lbs.Turkey breast meat, cooked, cut into strips
  • 1 cup Orange wedges
  • 1 cup Celery, thin bias cut
  • 1 cupCarrot, julienne cut (thin strips)
  • 1/2 cupRaisins
  • 1/3 cupToasted sliced almonds
  • 1/4 cupScallions, minced
  • 6 - 8 Mint leaves, minced
  • 1 tsp.Cilantro, minced
  • 4 Red leaf lettuce leaves

    Orange Curry Dressing
  • 1/2 cupMayonnaise
  • 1 tsp.Orange zest
  • 1/4 tsp.Fresh ginger, minced
  • 2 tsp.Honey
  • 1 tsp.Red wine vinegar
  • 1/2 tsp.Soy sauce
  • 1/4 cupOrange juice
  • Salt to season
  • Fresh ground black pepper to season

    Method
    Prepare Orange Curry Dressing by combining ingredients in a mixing bowl. Season to taste, reserve.

    Place turkey, orange wedges, celery, carrot, raisins, almonds, scallions, mint leaves and cilantro in a large mixing bowl. Add dressing and toss until ingredients are well coated with dressing.

    Place red leaf lettuce on chilled serving plates and top with Orange Curry Turkey Salad.

    Makes 4 Servings
