Orange Curry Turkey Salad

1 1/4 lbs.Turkey breast meat, cooked, cut into strips 1 cup Orange wedges 1 cup Celery, thin bias cut 1 cupCarrot, julienne cut (thin strips) 1/2 cupRaisins 1/3 cupToasted sliced almonds 1/4 cupScallions, minced 6 - 8 Mint leaves, minced 1 tsp.Cilantro, minced 4 Red leaf lettuce leaves Orange Curry Dressing
1/2 cupMayonnaise 1 tsp.Orange zest 1/4 tsp.Fresh ginger, minced 2 tsp.Honey 1 tsp.Red wine vinegar 1/2 tsp.Soy sauce 1/4 cupOrange juice Salt to season Fresh ground black pepper to seasonMethod
Prepare Orange Curry Dressing by combining ingredients in a mixing bowl. Season to taste, reserve. Place turkey, orange wedges, celery, carrot, raisins, almonds, scallions, mint leaves and cilantro in a large mixing bowl. Add dressing and toss until ingredients are well coated with dressing.
