Ham And Spinach Breakfast Wrap
Chef Larry's Recipe
Ingredients
Prepare Chef Larry's Salsa Fresca, reserve. Beat eggs and season with salt and pepper, reserve. Heat a small amount of cooking oil in a non-stick pan. Add scallions and peppers. Add ham and spinach, cook until spinach wilts. Add beaten eggs and minced parsley, cook until set. Heat tortillas and spread with softened Boursin cheese. Place scrambled ham and spinach mixture in center of the tortillas and top with shredded Jack cheese. Roll up to form "burritos". Cut in half and place on serving plates. Garnish with Chef Larry's Salsa Fresca and serve with fresh fruit or berries. Makes 4 Servings Chef Larry's Salsa Fresca

Combine ingredients in food processor or blender. Gently pulse until mixture is slightly liquid. Adjust seasoning if necessary. Cover tightly and refrigerate until service. Makes 2 cups
- 4 Tortillas, large as needed Cooking oil 1/4 cup Scallion, minced 2/3 cup Smoked ham, diced 1/4 cup Red and green bell pepper, seeded, diced 2 cups Fresh spinach leaves, stemmed, rough chopped 1 tsp. Fresh parsley, minced Salt to season Fresh ground black pepper to season 4 oz.
