Cinco de Mayo Chicken Fajitas

Chef Larry's Recipe

Ingredients
  • 2 lbs. Chicken breast, boneless, skinless, cut into strips
  • 1 cup Red bell pepper strips
  • 1 cup Green bell pepper strips
  • 1 cup Onion, sliced
  • 1/2 cupScallions, sliced
  • 1 tsp. Garlic, minced
  • 1/4 cupCilantro, minced
  • 2 T. Olive oil
  • 1/4 cup Lime juice
  • 1/2 tsp. Ground cumin
  • 1/2 tsp. Chili powder
  • Salt to season
  • Fresh ground black pepper to season
  • 1 T. Cooking oil

    For Service
  • 1 cup Cheddar or Monterrey Jack cheese, shredded
  • Guacamole as needed (Guacamole Recipe)
  • Flour tortillas as needed
  • Grilled scallions as needed

    Method
    Place chicken breast strips, peppers. onion, scallions, garlic, cilantro, olive oil, lime juice, cumin and chili powder in non-reactive bowl. Season with salt and pepper.

    Marinate under refrigeration for one hour. Preheat a large skillet or sauté pan until very hot, add cooking oil. Add marinated chicken; cook until done over high heat, searing in flavor. Transfer to a warm serving platter.

    Serve with shredded cheese, guacamole, hot flour tortillas and grilled scallions.

    Makes 6 - 8 Servings
