2 lbs. Chicken breast, boneless, skinless, cut into strips 1 cup Red bell pepper strips 1 cup Green bell pepper strips 1 cup Onion, sliced 1/2 cupScallions, sliced 1 tsp. Garlic, minced 1/4 cupCilantro, minced 2 T. Olive oil 1/4 cup Lime juice 1/2 tsp. Ground cumin 1/2 tsp. Chili powder Salt to season Fresh ground black pepper to season 1 T. Cooking oilFor Service
1 cup Cheddar or Monterrey Jack cheese, shredded Guacamole as needed (Guacamole Recipe)
Flour tortillas as needed Grilled scallions as needed Method
Place chicken breast strips, peppers. onion, scallions, garlic, cilantro, olive oil, lime juice, cumin and chili powder in non-reactive bowl. Season with salt and pepper.Marinate under refrigeration for one hour. Preheat a large skillet or sauté pan until very hot, add cooking oil. Add marinated chicken; cook until done over high heat, searing in flavor.
