Macadamia Crunch French Toast

Ingredients:
Prepare Berry Syrup, by combining maple syrup, berry puree and fresh berries in a saucepan. Bring to a simmer over low heat. Remove from heat. Combine Macadamia nuts and crushed corn flakes, mix and reserve. Heat griddle and add a small amount of cooking oil or butter. Dip bread slices in egg batter and then in Macadamia / corn flake mixture and place on griddle. Cook until golden brown on both slices. Place on warm serving plates and top with Berry Syrup. Garnish with whipped cream, mint and halved strawberries. Dust with Confectioner’s sugar and serve.
- 4 slices Sourdough bread, thick slice, cut in half 3 each Eggs 1/4 cup Milk 1/4 tsp. Ground cinnamon 1/2 tsp. Vanilla 1/3 cup Macadamia nuts, chopped 1 1/4 cup Corn flakes, crushed as needed Cooking oil or clarified butter 3/4 cup Maple syrup 3/4 cup Fresh berry puree 1 cup Fresh mixed berries: strawberries, raspberries, blackberries, blueberries 1 cup Lightly sweetened whipped cream to garnish Confectioner’s sugar 4 each Mint sprigs to garnish Fresh strawberries, stem, cut in half
