Ingredients
Place buttered English muffins on a preheated griddle. Cook until golden brown, reserve. Beat eggs and season with salt and pepper, reserve. Heat a small amount of cooking oil in a non-stick pan. Add scallions, ham, peppers, tomato and mushrooms, saute until tender. Add beaten eggs and minced parsley, cook until set. Place toasted English muffins on warm serving plates. Top with scrambled egg mixture. Top with shredded Smoked Gouda cheese. Garnish with minced chives and serve with fresh fruit or berries. Makes 4 Servings
- 8 Eggs, large 4 English muffin, split and buttered 1/4 cup Scallion, minced 1/2 cup Smoked ham, diced 1/4 cup Red, green and yellow bell pepper, seeded, diced 1 cup Mushroom, sliced 1/3 cup Tomato, diced 1 tsp. Fresh parsley, minced 1 cup Smoked Gouda cheese, shredded Salt to season Fresh ground black pepper to season Cooking oil as needed Fresh fruit or berries for service
