Ingredients
Combine eggs and milk. Season with salt and pepper. Mix well and reserve. Heat oil in a omelette pan. Portion in scallions, peppers, ham and rapini, saute until tender. Portion beaten egg into pan. Add parsley. Stir and cook until set. Flip or turn omelette. Top with shredded smoked gouda cheese. Fold omelette and turn out onto warm serving plates. Garnish with fresh fruit or berries. Repeat process to create 4 servings. Yield: 4 Servings Chef Larry's Notes
Rapini or broccoli rabe (or raab) is a popular vegetable in the Mediterranean and Chinese kitchens. Resembling broccoli, it is related to the turnip and is available in most specialty produce markets.
