- 1 lb. Beef sirloin, thinly sliced (1/8 inch thick) 1/3 cup Soy sauce 1/4 cup Lemon or calamansi juice 1/4 tsp Black pepper 1 T. Sugar 3 Garlic cloves, crushed 8 Eggs Cooking oil as needed Chef Larry's Garlic Rice as needed (recipe follows) 8 Tomato slices Scallions to garnish, minced
Place beef slices in a non-reactive bowl. Top with soy sauce, lemon juice, black pepper, sugar and garlic. Mix well. Cover with plastic wrap and marinate overnight. Prepare Garlic Rice per recipe, reserve. Drain marinated beef slices well and cook on a griddle or fry until done. Fry eggs to desired doneness in a small amount of oil. Portion cooked Beef Tapa, fried eggs and Garlic Rice onto serving plates. Garnish with sliced tomatoes and minced scallions Makes 4 Servings Chef Larry's Notes

Ingredients
- 2 tsp. Canola oil 4 cups Cooked white rice 3 cloves Garlic, minced Salt to taste Fresh ground black pepper to taste
Preheat saute pan or skillet. Add oil and garlic; sauté until garlic begins to brown. Add remaining ingredients. Adjust seasoning if necessary. Makes 4 Servings
