Shrimp Salad

- 1 lb.Shrimp, cooked, cut into small dice 1 cup Celery, finely diced 1/4 cupRed and green bell peppers, finely diced 1/4 cupScallions, minced 1/2 cupMayonnaise 1 1/2 tsp.Dijon white wine mustard 1/4 tsp. Curry powder 1/2 tsp.Worcestershire Sauce 2 - 3 dashes Tabasco Sauce Squeeze of Fresh lemon juice Salt to season Fresh ground black pepper to taste
- 4 Red or green leaf lettuce leaves 1 Avocado, sliced 8 - 12 Tomato slices 4 Dark bread slices 4 Lemon wedges
Place ingredients in a mixing bowl and mix well, season to taste with salt and pepper and a squeeze of lemon. Place leaf lettuces on chilled serving plates and top with Shrimp Salad. Garnish with avocado, tomato, bread slices and lemon wedges. Makes 4 Servings
