Pork Chops With Grilled Pineapple Relish

- 4 Pork chops, 7 - 8 oz. each Chef Larry's BBQ Spice as needed (recipe follows)
- 1 1/4 cup Grilled pineapple, peeled, small dice 1/4 cupRed onion, finely diced 1/6 cup Red and green bell pepper, finely diced 1/2 tsp.Jalapeno pepper, seeded, finely diced 1/4 cupPineapple juice 1 1/2 tsp. Red wine vinegar 1 tsp. Olive oil 1 1/2 tsp. Sugar 2 tsp. Cilantro, chopped 1 tsp.Fresh mint, chopped Salt to taste Fresh ground black pepper to taste
Prepare Grilled Pineapple Relish by placing ingredients in a large bowl and mix well. Season with salt and pepper. Refrigerate for 2-3 hours to allow flavors to develop. Heat grill or BBQ. Sesaon pork chops with Chef Larry's BBQ Spice. Place on grill and cook until done (firm to the touch). Transfer to warm serving plates and top generously with Grilled Pineapple Relish.
