Jalapeno BBQ Sauce, BBQ Spice

Chef Larry's Recipe

Ingredients
  • 1 T.Olive oil
  • 1/2 cupOnion, diced
  • 1/2 tsp.Garlic, minced
  • 1/4 cupRed wine vinegar
  • 2 tsp.Ground cloves
  • 1 tsp.Ground allspice
  • 1/4 cupCilantro leaves, chopped
  • 1/2 cupBrown sugar
  • 2 tsp.Jalapeno peppers, seeded finely diced
  • 12 oz.Tomato ketchup
  • 1 T.Worcestershire sauce
  • Salt to taste
  • Fresh ground black pepper to taste
Method
Heat olive oil in a saucepan and saute onion, garlic and jalapeno peppers until translucent. Add the vinegar, cloves, allspice and cilantro and simmer until reduced by 1/2. Add the brown sugar, ketchup and Worcestershire sauce. Simmer for 25 minutes or until proper consistency is achieved. Place in blender and puree until smooth. Season with salt and fresh ground black pepper. Reserve.

Makes 1 pint

Chef Larry's BBQ Spice
Ingredients
  • 1/2 cupPaprika
  • 1/2 tsp. Cayenne pepper
  • 1 tsp.Black pepper
  • 1/4 tsp.Ground cumin
  • 1/4 cupThyme leaves
  • 1/4 cupOregano leaves
  • 2 tsp.Granulated garlic
  • 1/2 tsp.Sugar
  • 1/4 cupSalt
Method
Combine ingredients, mixing well. Store in air-tight container and reserve until use. Use for meat, poultry and fish.

Makes 1 cup
