Tilapia With Haliya Mango Wine And Lime Sauce

Yield: 4 - 6 ServingsIngredients:
8 each Tilapia fillets, 2 1/2 - 3 oz. each 1 1/2 cup Flour To season- Salt To season - Fresh ground black pepper 1/4 cup Cooking oil 2 oz. Butter 1/4 tsp. Garlic. minced 1/3 tsp. Shallot, minced 4 oz. Haliya Mango Wine 1 tsp. Fresh parsley, chopped Squeeze- Fresh lime juice 8 each Lime slices To taste - Salt To taste - Fresh ground black pepperMethod:
Season flour with salt and fresh ground black pepper, reserve. Preheat a sauté pan over medium high heat. Dredge Tilapia fillets with seasoned flour, shaking off excess. Add cooking oil to sauté pan. Add floured Tilapia fillets, cook until golden brown and done (approximately 3 - 4 minutes per side) Remove and reserve, keeping warm. Drain excess oil from pan then add butter and melt, Add garlic and shallot, sauté just until tender, do not brown. Deglaze with Haliya Mango Wine Allow liquid to simmer and reduce by 1/2. Add lime slices to sauce and season with salt, pepper, squeeze of lime and parsley. Arrange sautéed Tilapia fillets on serving plates or a platter. Top with lime slices and sauce, serve immediately.Chef Larry's Notes
