Prepare spread by combining mayonnaise, mustard and sweet relish. Mix thoroughly, reserve. Carefully slice bagel into three layers to create top, middle and bottom slices. Top each slice. Place a piece of green leaf on bottom bagel slice, then top with tomato slices and some turkey. Add middle bagel slice and top with another piece of green leaf lettuce, cucumber slices and more turkey.Finish with top bagel slice. Gently press sandwiches down and slice in half or into quarters. Wrap and pack as part of a healthy sack lunch with trail mix, fresh fruit and vegetable sticks.Makes: 2 sandwichesChef Larry's Notes
