Use eggs, prepared poached, "sunny side up," fried or scrambled as needed.Method
Preheat non stick saute pan or skillet over medium heat. Melt butter in pan, add onions and peppers, saute for 2 minutes. Add potatoes and cook until brown. Add sausage and garlic. Season with paprika, salt and pepper. Finish with fresh chopped parsley.Makes: 6 - 8 ServingsChef Larry's Notes
Use a spicy smoked sausage in this recipe for extra "zip". You may also substitute bacon or ham in this recipe. The red potatoes are diced and cooked in boiling water until slightly tender.
