Ingredients

  • 1 1/2 lbs. Lean pork shoulder or butt, cut into 1 /12" cubes
  • 1 cup Onions, sliced
  • 4 each Garlic cloves, minced
  • 3 - 4 each Bay leaves
  • 12 - 15 Whole black peppercorns
  • 1/3 cup Apple cider vinegar
  • 1 cup Soy sauce
  • 1 cup Unsalted chicken stock or water
  • 2 tsp. Canola oil
  • 1/2 lb. Potatoes, peeled and cut into 3/4" cubes
  • Scallions, minced to garnish
  • Steamed rice or service

    Method
    Combine pork, onions, garlic, bay leaves, peppercorns, vinegar, soy sauce and chicken stock in a bowl. Mix ingredients well. Allow pork to marinate for at least 1 hour. Drain pork reserving liquid.

    In a saucepan heat oil. Add pork and sear over medium high heat until well browned. Add reserved liquid and bring to a simmer. Reduce heat and simmer covered for 15 - 20 minutes. (If liquid absorbs too quickly add more chicken stock or water)

    Add cubed potatoes and simmer for an additional 10 minutes or until potatoes are tender. Transfer to a large serving bowl or platter and garnish with scallions. Serve with steamed rice. Enjoy!

    Yield: 4 - 6 Servings
