Penne With VuQo Vodka Tomato Sauce

Yield: 4 Serving

Ingredients:
  • 12-14 oz. Penne pasta, cooked "al dente"
  • 3 oz. VuQo Premium Vodka
  • 1/2 cup Cream

    For the base sauce:
  • 1 cup Diced tomatoes, canned with juice
  • 2 tbsp. Olive oil
  • 1/2 tsp. Fresh garlic, minced
  • 1/4 cup Onion, diced
  • 4 each Basil leaves, minced
  • 1/2 tsp. Thyme leaves
  • 1/2 tsp. Oregano leaves
  • 1/4 cup Vegetable stock or chicken stock
  • to taste Salt
  • to taste Fresh ground black pepper
  • To garnish Fresh minced chives
  • For service Parmesan cheese

    Method:
    Prepare base sauce by heating olive oil in a small saucepan over medium heat. Add garlic and onion. Sauté until translucent, do not brown. Add tomatoes, first quantity of minced basil, thyme and oregano. Reduce to low heat and slowly simmer for 10 minutes, stirring regularly to avoid scorching. Add stock and simmer over low heat for 20 -25 minutes. Season with salt and pepper and reserve keeping warm until service. For service, heat base sauce to a simmer, add in VuQo Premium Vodka and simmer over low heat for 5 minutes. Add in cream and bring to a simmer. Season with VuQo Vodka Tomato Sauce with salt and fresh ground black pepper. Heat penne in lightly salted simmering water, drain well and add to sauce. Toss well, adjust seasoning if necessary and transfer to warm pasta bowl. Garnish with Parmesan cheesed and minced chives, serve immediately.
