<B>Ingredients</b><br> <LI>4 slices White sandwich bread <LI>1 1/2 tsp. Butter, softened <LI>4 slices Smoked ham, sliced <LI>2 slices Swiss cheese, sliced <LI>2 slices Cheddar cheese, sliced <LI>1 tsp. Chives, minced <LI>3 Eggs, beaten <LI>1/4 cup Milk <LI>Salt to season <LI>Fresh ground black pepper to season <LI>Canola oil as needed <LI>Powdered sugar for service <LI>Fresh sliced fruit for service<P> <B>Method</B> <br> Combine egg and milk, whisk until well beaten. Season with salt and pepper, reserve. Place enough oil in a deep sided sauté pan or skillet to fill it one quarter of the way up. Heat over low flame. Spread softened butter on bread slices and sprinkle with chives. Place Swiss cheese on two of the bread slices. Top with slices of ham, cheddar cheese and remaining bread slices. <P> Insert three toothpicks in each sandwich to secure and divide into three equal pieces. Trim crust if desired and slice sandwiches. Dip each piece in the egg mixture shaking off excess. Carefully place into hot oil. Fry until golden brown on all sides. Drain well and place on a paper towel to cool slightly. Carefully remove toothpicks and place three pieces on each serving plate. Dust generously with powdered sugar. Serve hot with fresh sliced fruit. <P> Makes 2 servings <P> <B>Chef Larry's Notes</B><br> The oil must be at a temperature of 350 - 375 degrees F to fry properly. Test oil with a high temperature thermometer of by carefully dipping a corner of the dipped sandwich into the oil.
