Super Bowl Beef Skewers, Spicy Apricot Sauce

Chef Larry's Recipe

Ingredients
  • 2-2 1/4 lb. Beef top sirloin, cut across the grain into long thin strips
  • 25-30 Bamboo skewers, 6 inch, soaked in water
  • 1/2 cupSoy sauce
  • 8 Garlic cloves, minced
  • 1/2 tsp. Ground black pepper
  • 1 1/4 cupChef Larry's Spicy Apricot Barbecue Sauce (recipe follows)
Method
Make beef skewers by "worming" beef strips onto bamboo skewers. Place beef skewers in a shallow dish or pan. Prepare marinade by combining soy sauce, sesame oil, garlic and black pepper Mix well. Pour marinade over beef skewers. Place under refrigeration and marinate for 2-3 hours.

Prepare Spicy Apricot Barbecue Sauce, reserve.

To cook beef skewers, preheat grill or grill pan. Drain beef skewers and discard any remaining marinade. Grill beef skewers over medium heat until cooked through. Baste skewers with Spicy Apricot Barbecue Sauce during the last minute or two of cooking. Place cooked beef skewers on a serving platter and serve with additional Spicy Apricot Barbecue Sauce.

Makes 6 Servings

Spicy Apricot Barbecue Sauce
Ingredients
  • 1/2 cup Apricot, canned, drained, pureed
  • 1/2 cup Orange juice
  • 1/2 cup Tomato ketchup
  • 1/2 tsp. Red wine vinegar
  • 1 tsp. Soy sauce
  • 1 T. Brown sugar
  • 1/4 tsp. Red chili flakes
  • 1/3 tsp. Fresh ginger, minced
  • Salt to taste
  • Fresh ground black pepper to taste
Method
In a saucepan, combine apricot puree, orange juice, ketchup, red wine vinegar, soy sauce, brown sugar, red chili flakes and ginger. Bring to a simmer over medium heat. Reduce to low and continue to simmer until sauce thickens (approximately 15 minutes.) Season with salt and fresh ground black pepper.

Makes 1 1/2 cup
