Super Bowl Aloha Burgers

Chef Larry's Recipe

Ingredients
  • 2 1/4 lbs. Ground beef sirloin, 80-85 percent lean
  • 1/2 tsp. Butter or cooking oil
  • 1/2 tsp. Granulated garlic
  • 1/2 cup Onion, finely diced
  • 1/4 cup Green bell peppers, finely diced
  • 2 T. Chef Larry's Huli Huli (Hawaiian BBQ) Sauce (recipe follows)
  • Salt to season
  • Fresh ground black pepper to season
  • 6 slicesSwiss cheese, cut into quarters
  • 16 Red leaf lettuces leaves, small
  • 16 Tomato slices from small tomatoes
  • 1 Red onion, thinly sliced
  • 16 King's Hawaiian bread rolls, buttered
Method
Prepare Chef Larry's Huli Huli Sauce per recipe, reserve. Saute onion and bell peppers in butter, cool. Preheat grill or barbecue. Place ground sirloin, sauteed onions and peppers granulated garlic and Huli Huli Sauce in a mixing bowl. Season with salt and fresh ground pepper and mix well. Portion into small 2 ounce balls and press to form small round burgers. Place burgers on grill.

Cook until done glazing with Huli Huli Sauce. Top each burger with Swiss cheese. Grill buttered Hawaiian bread rolls. Place burgers on grilled Hawaiian bread rolls and top with additional Huli Huli Sauce. Garnish with red leaf lettuce leaves, tomato and red onion slices. Place on a large serving platter and serve with Chef Larry's Potato Salad or Slaw.

Makes 6 - 8 Servings

Huli Huli (Hawaiian Barbecue Sauce)

Ingredients
  • 1/4 cup Soy sauce
  • 1 cup Tomato ketchup
  • 1/4 cup Brown sugar
  • 3/4 cupsPineapple juice
  • 2 T. Sherry
  • 1 tsp.Fresh ginger, peeled and grated
  • 4 Scallions, minced
  • 1/2 tsp.Garlic, chopped
  • Fresh ground black pepper to taste
Method
Place soy sauce, brown sugar, pineapple juice, ginger and garlic in saucepan and bring to a simmer over medium heat. Reduce heat and stir in tomato ketchup, scallions and sherry continue to simmer over low heat for 25 minutes. Stirring constantly to avoid scorching. Season with pepper and remove from heat. Cool sauce and reserve until use.

Makes approximately 2 cups
