Method
Place cream and vanilla in a heavy saucepan. If using vanilla bean, split and scrape into cream. Bring to a boil over medium heat. Remove and let cool for 15 minutes. Combine eggs and sugar in a bowl. Whisk until eggs turn a pale yellow color. Add cooled cream into egg yolks and mix.
Portion mixture into brulee dishes or ramekins. Create bain marie or water bath by placing filled dishes into a deep baking pan and add 1 - l 1/2 inches of water to baking pan.
Bake in preheated oven at 325 degrees F for 1 hour. Remove and cool. For service, sprinkle 1 tsp. sugar over each creme brulee. Glaze in top broiler or with small torch, until sugar caramelizes.
Cool slightly, garnish with a rosette of whipped cream, berries and mint sprigs.
