Mexican Hot Chocolate

Ingredients

  • 4 c. milk
  • 4 oz. Ibarra Mexican chocolate
  • 2 oz. Rompope (Mexican vanilla liqueur) optional
  • 3/4 c. lightly sweetened whipped cream
  • Ground cinnamon to garnish
  • Cocoa powder to garnish

    Method
    Heat milk in saucepan over low heat. Stir in chocolate until dissolved. Add optional Rompope vanilla liqueur. Carefully transfer mixture to a blender. Blend until smooth. Portion into cups and garnish with cinnamon and cocoa powder.

    Chef Larry’s Notes
    Ibarra chocolate is Mexican chocolate flavored with vanilla and cinnamon. It is available in markets in the international foods section. Ibarra is the most recognized brand name although there are other available. Using a lightly sweetened whipped cream balances the sweetness of the chocolate.
