Roasted Garlic Mashed Potatoes

For the roasted garlic
Method
To prepare roasted garlic preheat oven at 375 degrees F. Carefully remove outer skin that will peel off easily. Cut a slice off tapered end of garlic bulb to slightly expose cloves, leaving bulb intact (do not break apart the cloves). Drizzle expose end of garlic bulb with olive oil, season with salt and pepper. Place in aluminum foil and enclose.
Place in oven and roast for 1 hour and 15 minutes at 375 degrees F. When done squeeze roasted garlic cloves from skin and puree. Cook red egg potatoes until tender, drain well and add butter. Add pureed roasted garlic. Heat milk and cream to boil. Add milk/cream mixture to potatoes in intervals while mashing to achieve desired consistency. Season with salt and fresh ground black pepper. Finish with chopped parsley.
