Spice Grilled Shrimp

Yield: 4 Servings

Ingredients:
  • 20 each Shrimp, 16 - 20ct. size, peeled, deveined
  • 20 each Baby red grape tomatoes
  • for service Chef Larry's Lemon Mustard Sauce
  • for service Chef Larry's Cucumber Salad (recipe follows)
  • to garnish Chive, minced

    For Chef Larry's Asian Spice:
  • 2/3 tsp. Cayenne pepper
  • 1 tsp. Ground cloves
  • 1 tsp. Curry powder
  • 1 tsp. Ground ginger
  • 1 tsp. Ground cinnamon
  • 1/2 cup Paprika
  • 2 tsp. Granulated garlic
  • 1/4 cup Salt
  • 1 tsp. Black pepper

    Method:
    Prepare Chef Larry's Asian Spice by combining ingredients, mixing well. Reserve. Prepare Chef Larry's Lemon Mustard Sauce and Cucumber Salad per recipes, reserve. Preheat grill. Place shrimp and baby grape tomatoes on skewers. Season liberally with Chef's Larry's Asian Spice. Place on preheated grill and cook shrimp for 3 -3 1/2 minutes on each side or until done. Remove shrimp skewers and place on serving plates with Chef Larry's Lemon Mustard Sauce and Cucumber Salad. Garnish with minced chives and serve immediately.

    Chef Larry’s Lemon Mustard Sauce

    Yield: 4-6 Servings

    Ingredients:
  • 1 each Lemon, squeezed for juice
  • 1/2 tsp. Lemon zest
  • 2 tsp. Whole grain mustard
  • 1/4 cup Mayonnaise
  • 2-3 tsp. Sugar
  • 1 tsp. Chives, minced
  • 3 dashes Worcestershire sauce
  • to season Salt
  • to season Fresh ground black pepper

    Method:
    Combine ingredients and mix well. Season with salt and fresh ground black pepper. Reserve under refrigeration until use.

    Chef Larry’s Cucumber Salad

    Yield: 4-6 Servings

    Ingredients:
  • 1 each Cucumber, peeled, julienne cut
  • 1 cup Carrot, julienne cut
  • 1/4 cup Red onion, thinly sliced
  • 1/2 cup Baby red or yellow grape tomatoes, halved2 tsp. Fresh cilantro leaves, rough chopped

    For the Dressing:

  • 1 tbsp. Rice wine vinegar
  • 2 tbsp. Olive oil
  • 2 tsp. Sugar
  • to season Salt
  • to season Fresh ground black pepper

    Method:
    Prepare dressing by combining ingredients. Season with salt and fresh ground black pepper and whisk well. Place cucumber, carrot, red onion, tomatoes and cilantro leaves in a bowl. Mix dressing well and pour dressing over vegetables. Gently toss. Adjust seasoning if necessary.
