Super Bowl "Two Step" Guacamole

- 4 each Avocados, ripe, peeled and seeded Tortilla chips, lightly salted for service For "Pico de Gallo":
3/4 cup Fresh tomatoes, diced 1/4 cup Red onion, finely diced 1/4 tsp. Jalapeno pepper, seeded, finely diced 1/2 tsp. Fresh garlic, minced 2 tsp. Cilantro, minced Fresh lime or lemon juice squeeze Salt to taste Fresh ground black pepper to taste
Step #1 - Prepare "Pico de Gallo" by combining ingredients in a large bowl. Mix thoroughly. Step #2 - Add avocado and gently mash while mixing to desire consistency. Season with salt and pepper. Cover tightly and refrigerate until service. Serve with tortilla chips or as a condiment. Chef Larry's Notes:
Make a double batch of my Pico de Gallo and reserve one half for a chunky salsa that may also be pureed slightly. Makes 8 - 10 servings.
