Yield: 6 servings Ingredients : 12 each Lumpia wrappers 3-4 each Small frying bananas 12 each Jackfruit slices 1/2 cup Brown sugar as needed Granulated sugar Canola oil for deep frying Method :
Peel banana and slice lengthwise into three "planks". Cut slices or "planks" in half. Place a slice of the banana in the center of a lumpia wrapper, sprinkle with brown sugar. Top with a slice of jackfruit and another slice of banana. Fold bottom portion of lumpia wrapper over. Fold in sides and roll to enclose. Secure using a dab of water. Repeat to create 12 or more Turon. Heat oil in a heavy pan over medium heat. Roll Turon in granulated sugar and fry in canola oil until crisp and golden brown. Place on a plate to drain, as the sugar on the inside (and outside) will stick to a paper towel. Transfer to a serving platter and serve as a snack or dessert.Chef Larry's Notes:
Saba or "pear" bananas and Jackfruit or Langka can be purchased in Filipino markets. If using regular bananas, select firm slightly under ripe fruit for this recipe. This dish is traditionally served as snack for "merienda".
