Arugula Salad With Shaved Parmesan, Candied Pecans, And Lemon Dijon Vinaigrette

Dressing
juice of 2 lemons 1/3 c. extra virgin olive oil 1 T. honey 1 T. Dijon mustard 1 garlic clove, minced salt and pepper to taste In a bowl, combine all ingredients and mix well. Set aside until ready to use.Salad
1, 7 oz. package arugula, washed and spun dry 1/2 c. shaved Parmesan cheese 1/4 c. candied pecans or toasted pecans (found at Trader Joe’s)
In a salad bowl, combine the arugula with the salad dressing; toss to coat.Divide the arugula equally among 4 chilled salad plates. Top with the shaved Parmesan cheese and candied pecans.
