Arugula Salad With Shaved Parmesan, Candied Pecans, And Lemon Dijon Vinaigrette

Serves 4

Dressing
  • juice of 2 lemons
  • 1/3 c. extra virgin olive oil
  • 1 T. honey
  • 1 T. Dijon mustard
  • 1 garlic clove, minced
  • salt and pepper to taste
  • In a bowl, combine all ingredients and mix well. Set aside until ready to use.

    Salad
  • 1, 7 oz. package arugula, washed and spun dry
  • 1/2 c. shaved Parmesan cheese
  • 1/4 c. candied pecans or toasted pecans (found at Trader Joe’s)
  • In a salad bowl, combine the arugula with the salad dressing; toss to coat.

    Divide the arugula equally among 4 chilled salad plates. Top with the shaved Parmesan cheese and candied pecans.
