Prepare the baking pan by spraying lightly with oil and dusting with a little of the dry cake mix.Prepare cake mix according to package directions and bake.
Remove from the oven and place on a cooling rack. Let cool completely and turn out onto the cooling rack.Whipped Cream Icing
2 c. heavy whipping cream
2 T. confectioners sugar
1 t. vanilla extract
In an electric mixer, with the whip attachment, combine all the ingredients and whip to stiff peaks.Assembly
1 pt. blueberries, washed
2 pt. of strawberries, washed, hulled and sliced in half or thirds
Slice the cake in half across the middle to make 2 layers. Place one of the layers on a cake stand or serving tray. Place a thin layer of the whipped cream over the cut layer and arrange some of the strawberries over the cream. Place the second layer over the top and ice the entire cake with the whipped cream.Decorate with blueberries and strawberries to resemble “Old Glory”.
