Sesame Udon Noodles

  • 2 T. vegetable oil
  • 6 fresh shiitake mushrooms, cleaned and sliced
  • 1, 20 oz. package fresh stir-fry vegetables
  • 2 garlic cloves, minced
  • 1/2 c. cilantro leaves, loosely packed
  • salt and pepper to taste
  • 1 package udon noodles, prepared according to package
  • 1, 12 oz. bottle spicy peanut vinaigrette (Trader Joe’s)
  • 1 T. sesame oil
  • 1 T. black or white sesame seeds

  • In a large wok, over medium high heat, heat the oil and sauté the mushrooms and stir-fry vegetables. Add the garlic, cilantro leaves, salt, and pepper.

  • Remove from the heat; add the udon noodles and spicy peanut vinaigrette.

  • Mound on a large platter and serve.
