4 medium size yams, washed, pierced with a fork 4 to 5 times each yam 2 T. unsalted butter, softened or to taste 1 T. brown sugar Salt and pepper to taste
Microwave the yams until soft about 5 to 7 minutes. Remove from microwave, wrap in a towel, and cool until easy to handle.Slice the yams open and scoop the meat into a bowl. Add the butter, brown sugar, salt, and pepper. Smash the yams and mix well.
Return to the microwave to warm just before serving, about 1 to 2 minutes.
