Pork Tenderloin With Citrus-Roasted Garlic Sauce

Serves 8

Citrus-Roasted Garlic Sauce
  • 1 c. olive oil
  • 1 c. fresh lime juice
  • 1 c. orange juice
  • 1/2 c. chopped fresh cilantro
  • 20 garlic cloves, peeled and roasted with 1 T. oil in a foil pouch in a 350° F. oven
  • 1 T. orange zest
  • 1 T. fresh oregano leaves
  • 2 1/2 t. ground cumin
  • Salt and pepper to taste
In a food processor or blender, combine all ingredients.

Pork
  • 4 pork tenderloins, trimmed of silver skin
In a zip-lock bag, marinade the pork in 1/2 of the sauce for 2 hours. Preheat the grill to medium high and oil the grid. Grill the pork tenderloins until an instant read thermometer inserted into thickest part of pork registers a minimum of 155°F., about 20 minutes.

Transfer the pork to a platter and cover loosely with foil. Let stand for 10 minutes before slicing. Slice the pork crosswise into 1/2-inch-thick slices.

Serve with the reserved sauce.
