Citrus-Roasted Garlic Sauce
- 1 c. olive oil 1 c. fresh lime juice 1 c. orange juice 1/2 c. chopped fresh cilantro 20 garlic cloves, peeled and roasted with 1 T. oil in a foil pouch in a 350° F. oven 1 T. orange zest 1 T. fresh oregano leaves 2 1/2 t. ground cumin Salt and pepper to taste
- 4 pork tenderloins, trimmed of silver skin
